Winter is nearly upon us and there is nothing like a steaming bowl of soup on a chilly winter day. I’m looking for good soup recipes to use throughout this winter.
And if you give your favorite soup recipe, you have a chance to win a copy of the 28 page “The Hope Chest Record Book”! This contest is open to anyone. All you have to do is comment on this post with your favorite soup recipe, and the person with the best recipe will win the book. You are welcome to enter more than one recipe if you wish. Hi Miss Kathryn! Here is a recipe that I came across and fixed up. It is more mine now than what it started out as. I have called it BUNNY SOUP (because I think a bunny would like it.
2lbs carrots (washed /peeled/shredded)
56 oz Chicken broth (if it isn’t your own stock, be sure to add some geletin to make it easier on the tummy)
2-3 stalks celery chopped
1 large onion chopped
1/4 c butter (real butter)
salt
pepper
garlic (4 cloves at least)
cayenne(1/4t at least/make to taste)
Parsley (best if freshly chopped)
Dill (best if freshly chopped)
Saute onion & celery in butter in a large covered pot till tender (don’t brown them, wait till they are transparent which is clear like) Add carrots and sweat them. Stirring around as you need to. Add Chicken Stock/broth and geletin if needed. Bring this to boil to draw out impurities. (that is the icky stuff in there) skim off the “scum”. Reduce the heat to simmer and cook at simmer for 30 minutes. Add herbs. Puree till smooth. (My mom has a hand held blender thing) Add the seasonings till it taste right to YOU. We like it a bit spicy.
This serves about 10.
you could put a dollup of creme fraiche on the bottom of each bowl you are serving and gently stir the soup before serving it. add a touch of fresh herbs to the center of the golden orange and white swirl and you will really impress guests with this easy breezy soup. This reheats well if frozen too!

I’m a big fan of this Baked Potato Soup…this recipe will make a HUGE batch, so I can freeze later!
Baked Potato Soup
8 potatoes, baked as usual
18 Tbsp butter
1 and 1/3 cup flour
12 cups milk
1 lb cheddar cheese
1 tsp salt
1 16-oz package sour cream
8 slices bacon, cooked and crumbled
1/2 bunch green onions (optional)
Take baked potatoes and scoop out the pulp; set aside. In a LARGE saucepan, melt the butter. Add the flour and stir until mixed completely. Slowly add milk while stirring constantly. Heat to a boil, stirring often! (It’s important to keep stirring to keep the milk from burning). Heat until mixture is thickened. Add cheddar cheese and salt. Mash the potato pulp and add to the batch, stir to combine until all the cheese is melted. Take the soup off the heat. Add the sour cream and stir to incorporate. Serve in a bread bowl or regular bowl. Can top/garnish with bacon and onions, if desired.

A yummy chicken tortilla soup recipe!!
2 packages of already cooked chicken fajita meat (I have also since just used chicken tenderloins cooked with a taco seasoning packet)
3 15 oz cans of black beans (or you can use a combo of beans — black, white, red, or whatever)
1 15 oz can of petite diced tomatoes
2 small cans of rotel tomates
a pinch of onion powder
a pinch of paprika
Tortilla chips
Mix all together and simmer for a wonderful soup. Crush tortilla chips over it or use them to scoop up the soup! So good even the kids will eat!!!

Nanny’s Potato Soup
This is a very simple recipe, no measuring needed! It never fails and always comes to our rescue on a cold winter’s day!
Peel and cut potatoes in large cubes
Peel carrots (as many as you like) and cut in thin slices
Add onions (diced) or onion powder to taste (my kids prefer onion powder)
BOIL until potatoes are soft
Drain
In a saucepan, using a whisk, make a roux of milk, margarine, and flour. About 3 T flour to 1/2 stick margarine and just enough milk to make it like pudding……then add milk gradually, keeping it smooth. Put this entire mixtue over boiled veggies. Gently mash the veggies a few times with a potato masher. Add chicken base to taste. (I use about 3 T)
Let simmer about five minutes for the chicken base flavor to filter through.
YUM!
EASY and ECONOMICAL!
Leftover meats (especially cooked ham) may be added for extra protien! ENJOY!
